This Colombian coffee came to Daisuke's roastery from Didier Burgos' La Primavera farm. Its flavours have the character of peach and cognac, as the name suggests.

It is a so-called castillo variety, bred from a cross between Caturra and Timor Hybrid to control coffee rust. It is characterised by high yields and a pleasant, natural sweetness and fruity flavour.

On the farms, the harvested grains have been treated with Lactic processing, which is increasingly recognised in the specialty field. The process is based on the fermentation of lactic acid bacteria naturally found on beans. The result is a coffee with unique, complex flavours and a particular acidity and smoothness.
