This delicacy from the El Recuerdo farm is a Castillo variety, mostly characterised by medium body, pleasant acidity and a strong sweetness. In our case, the fruity flavour of Cascara dominates.
The green beans are processed Bio Natural on the farms. This ensures the naturalness and complexity of the coffee flavour. The process involves the avoidance of chemical inputs and the use of natural solutions to protect the plant and preserve soil nutrients.
After harvesting, the pulp is removed from the grains by natural processing.
